Synopsis

Agriculture is one of the oldest man-made practices. It has two fundamental milestones: on the one hand, the Neolithic or agricultural revolution, where man domesticated plants for his own benefit and to generate surpluses; On the other hand, the Green Revolution, in which fertilizers and chemical inputs were applied to crop fields to confront the increase in world hunger. However, in the long term, the consequences of the use of these products brought disastrous consequences, including the annihilation of beneficial insect pests, the contamination of soils and rivers, high levels of chemical pollution, among other consequences that are manifested in the water (intensive use of irrigation), air (use of pesticides) and soil (increased erosion).

For its part, agroecology is a scientific discipline that studies the interactions between agriculture and ecosystems to give it a natural and sensitive approach that leads to the creation of sustainable agricultural systems with better quality products that better revitalize and conserve soils and does not create dependence on industrial and synthetic inputs. Under this context, this work focuses on food security, which refers to the physical, economic and sociocultural access to sufficient, safe and nutritious food that, when used correctly, meets the nutritional needs to achieve a healthy and active life. This is developed in order to confront malnutrition and obesity that has grown considerably in recent years.
